We are delighted to announce that Chef Lecturer Tony Wright has been chosen to represent the UK in the prestigious Bocuse d'Or competition. Chef Wright will be supported by Culinary Arts Management student Jack Gameson who recently came 3rd in the BCF Young Chef of the Year final.
Chef Wright and Jack have begun preparations for the European selection held in Budapest in May 2016 using the replica Bocuse kitchen at UCB. You can read more about the competition here! On Monday 2nd November, UCB will be hosting the final of the British Culinary Federation Young Chef of the Year competition. The prestigious competition will be followed by Dinner and Awards in our fine dining restaurants.
Jack Gameson is representing UCB in the final cook-off. Jack started at UCB at 15 years old when he enrolled at Young Chefs Academy where students learn how to make starters, mains and desserts over 8 weeks on Saturday mornings. After school, Jack joined UCB full-time studying Professional Cookery at levels 1-3 and is now studying higher education at UCB on Culinary Arts Management BA (Hons)! Jack has been mentored by Chef lecturer Mat Shropshall to produce a 3 course meal and has been busy practising in the incredible Bocuse d'Or kitchen opened by Brian Turner CBE at UCB. Jack has been shortlisted alongside UCB alumni Matt Nicholls (Cheal's Restaurant) and Leonidas Kattou (Simpson's Restaurant). All finalists can be found here. Situated in our Summer Row campus, it is the ideal environment for sensory analysis, development of product knowledge and developing practical wine and spirit skills.
The 1st year Btec Hospitality were the lucky group who were first to test it out! As part of their Alcoholic Beverages Unit, students are required to create and produce a cocktail using a base spirit. An individual and group evaluation then took place to assess the suitability of the glassware, garnish, taste and overall presentation of the cocktail. Ever wondered what a pastry lesson involves? We are thrilled to announce that UCB has been shortlisted as part of the Springboard Awards for Excellence! There are 3 categories of the awards which "celebrate and reward inspiring people, organisations and initiatives – those that work hard to elevate the profile of the industry as an employer and, attract and retain talent". UCB are proud to have been shortlisted for Best Use of Digital Media as part of the Attracting and Developing People category.
The short listing recognises the use of digital media in classrooms, restaurants, marketing and blogging to keep our students engaged by using platforms that they are familiar with. We are getting very excited about the Skills Show! This free event takes place at the NEC 19-21 November. UCB will have a huge presence at the show with staff and students from all departments available to chat with. The College of Food will be running "Have a Go" sessions in making mocktails and decorating cupcakes! The College of Food will once again be running the service of the Skillet restaurant, giving our students a fantastic experience of running a restaurant at an outside event.
